Sinugbang Baboy Full Recipe


Pound skinless pork belly
Soy sauce
Large onions

1.    Cut pork belly into pieces about 3-4 inches square. Thinly slice each piece into squares no more than 1/4-inch thick. (Partly freezing the pork belly will make it easier to slice.)

2.    Combine soy sauce, vinegar, onions, garlic and pepper to taste in a large container. Dip the pork well into the marination and set aside. Marinate for 3-5 hours but preferably overnight.

3.    Prepare the grill. Heat a grill and brush with oil. Place pork slices on grill and cook, turning every 4 minutes or so, until well seared and caramelized at the edges, about 20 minutes’ total cooking time. Put the remaining oil and add the ketchup in a small mixing bowl, glaze it into the grilled pork using malunggay leaves if you don’t have a glazing brush.

4.    Slice the cooked grilled pork into strips or any sizes you like.

5.    Ready to serve.
